Slow Cooker White Chicken Chili

Ingredients:

  • 1 ½ lbs. Boneless, skinless chicken
  • 1 Tbsp. ghee (Clarified Butter) or avocado oil
  • 1 medium onion, diced
  • 1 medium bell pepper, any color
  • 1 small jalapeño, seeds and membranes removed and finely diced
  • 6 cloves garlic
  • 2 ½ tsp. ground cumin
  • 1 tsp. dried oregano
  • 1 tsp. chili powder
  • 1 tsp. sea salt
  • ¼ tsp. black pepper
  • 4 cups organic chicken broth or bone broth
  • 1 14-ounce can coconut milk
  • Juice of ½ lime
  • ½ cup fresh cilantro, chopped
  • Fresh cilantro and lime wedges for garnish

Directions:

  1. Saute onion, peppers and garlic until tender.
  2. Add spices (cumin through black pepper)
  3. Pour onion mixture into Crockpot.
  4. Layer chicken on top of mixture.
  5. Add broth.
  6. Cook 5-6 hours on LOW.
  7. Shred chicken and return chicken to Crockpot.
  8. Turn heat to HIGH.
  9. Add coconut milk.
  10. Cook 10-15 minutes.
  11. Stir in lime juice and cilantro.
  12. Serve.
